Abstract : "This paper seeks to identify the elements that make a coffee producer in Peru, produced organically. So through logit and probit models of social, economic and environmental determinants are identified. Information of the Fourth National Agricultural Census is used (2012). Producers with more experience in the cultivation of coffee, men, more educated, those involved in associations, committees or cooperatives, which are more coffee plantings, which access to financing, training and technical assistance; are more likely to produce certified organic coffee. Similarly, the practices of sustainable land management have a positive influence on technology adoption".
